Most people taste real bilona ghee for the first time and go quiet for a second. Not because it's dramatic - because it's familiar in a way they weren't expecting. Like something they ate at a grandparent's house and had been trying to find since.
This is that jar. Five hundred millilitres, same process as our 1000ml, no differences in what goes in or how it's made.
It starts with the cows. Gir and Sahiwal - indigenous desi breeds kept at Govind Gau Sadan, our own sanctuary. A2 milk, naturally - these are indigenous desi breeds, not commercial hybrids. The curd is set overnight using a spoonful from the previous batch, the way it has been done for generations. Churned by hand the next morning. Cooked slowly until it clears. Two days of work for one small jar of real bilona ghee.
